EXPERIENCE
Darlene has attained
nearly twenty years of valuable experience in both Food &
Beverage operations and project development through diverse
employment opportunities. During the time she was completing
her bachelors at Our Lady of Holy Cross, she simultaneously worked
as the Catering Director of Lenfants and La Louisianne, two fine
dining restaurants located in New Orleans, Louisiana. She then
ventured off into her first development project, Caddyshack
Café & Bar, where she developed the restaurants concept
and later served as both owner and operator. She worked as a
consultant in the opening of King Creole Restaurant & Catering
in Metairie, Louisiana and in 1998 was hired by Semolina
Corporation as Vice President of Operations with full
responsibility of 35 restaurants. During this tenure, she
worked with APEX group and Metromedia group in Plano, Texas and
throughout the United States. She developed, built and
operated Semolina’s Bistro Italia. Darlene worked with
Copeland’s Restaurant on multiple concepts including Straya,
Wrap n Roll, Wholly Makeral and Copelands. She worked with
renowned chefs such as Henri Davis and Joe Savoy and consulted with
Sal Siegel for a ciga hotel in Milan, Italy. Darlene also consulted
on a 14 million dollar renovation of the Tchefuncta Country Club in
Mandeville, Louisiana as well as a bar program for
Christine’s and Le Boom clubs in Cancun,
Mexico.
As Vice President of
Food & Beverage for HRI Lodging, she incorporates all of her
vast experience to oversee the daily operations of six hotels and
the development of three Seattle’s Best Coffee Cafes while
assisting in the development of all new
projects.
